Vegan Sweet Potato Brownies

Ingredients for the brownie batter

* Make sure all the ingredients are organic *

  • 500g Sweet potatoes
  • 12-14 Medjool dates
  • 100g Ground oats
  • 7 tbsp Pure maple syrup
  • 100g Ground almonds
  • 2 tbsp Melted coconut oil
  • A pinch of salt
  • 100g Ground oats
  • 6 tbsp Raw cocoa powder
  • 1 tsp Vanilla extract

Ingredients for the frosting

  • 2 tbsp Coconut oil
  • 2 tbsp Almond butter
  • 2 tbsp Dutched cocoa powder
  • 2 tbsp Maple syrup

Instructions for the batter

* Preheat the oven to 180° Celsius. *

  1. Bake the sweet potatoes for about 30 minutes at 180° C or until they become really soft. Let them cool and remove the skin.
  2. Mash them down with a potato masher or a fork and set aside.
  3. With a food processor, blend 12-14 Medjool dates and then add the mashed potatoes and blend together until the mix is silky smooth.
  4. Combine all the dry ingredients in a bowl, stir well and add the sweet potato and dates mixture. Mix until all ingredients are well combined.
  5. Keep mixing well, add 2 tsp of coconut oil, the vanilla extract and the maple syrup.
  6. Place a sheet of parchment paper in a brownie pan, and scoop the batter in and spread it evenly.
  7. Place the pan in the oven and bake at 180°C for about 45 minutes or until a tester inserted comes out clean.

Instructions for the frosting

  1. Place all the ingredients in a bowl and mix until the mixture is glossy.

Final touches...

  1. Remove the brownies from the pan and let them cool.
  2. Scoop the frosting on top and spread evenly.
  3. Cut in squares and add some roughly chopped nuts or pistachio.
